CHOCOLATE CHIA SEED PUDDING WITH HOMEMADE COCONUT YOGURT

Servings: 2

INGREDIENTS:

  • 1/2 cup chia seeds
  • 1/4 cup raw cashews
  • 1 ripe banana
  • 2 cups water
  • 1 tbsp liquid sweetener (coconut nectar, date syrup, honey)
  • 1/2 tsp cinnamon

Instructions:

  1. Combine cashews, banana, cacao, water, cinnamon, your choice of liquid sweetener in a blender and process the same way if you would make a smoothie or banana cashew milk.

  2. Place the chia seeds in a mason jar or bowl. Pour the banana chocolate mixture over the chia seeds and stir.

  3. Place the pudding in the refrigerator and let it thicken. Ready in about 2 hours.

Other Good additions: Strawberries, mango or even squeezed orange juice (but with no cinnamon).

I like to serve it with some coconut yogurt.

HOMEMADE COCONUT YOGURT RECIPE

MAKE IT IN ADVANCE (TAKES 2 DAYS TO SET).

Instructions:

  1. Pour a can of coconut cream or full-fat coconut milk into glass jar or bowl. The most natural brand that doesn’t have guar gum and other additives.
  2. Take three probiotic capsules and stir the powder into the coconut cream with a plastic, wooden, or ceramic spoon. Make sure the brand you use has nothing else but probiotics (especially, no prebiotics).
  3. Cover the jar with cotton cloth or a piece of paper towel and secure it with an elastic band. Place it in a dry warm place but away from direct sunlight & heat.
  4. After 2 days, check if looks good (no funky colors or smells). If the color is clean white and it’s smells like coconuts.
  5. Last step- refrigerate. Stays fresh in the refrigerator in an airtight container for up to 5 days.
