Sacha Inchi Protein Bars

Gluten-Free, Vegan, No-Bake, Refined Sugar-Free.

The key ingredient in this recipe for me personally is the Sacha Inchi Powder. I’ve read many articles and studies about the beneficial properties of Sacha Inchi. It is a great source of vitamins A and E, calcium, zinc, potassium and fiber. Containing all the essential amino acids, Sacha Inchi is a complete protein with a high content of Omega 3 fatty acids, as well as Omega-6 fatty acids, Omega-9 fatty acids. Initially I bought this protein powder specifically for my morning protein shakes. But to be honest, I didn’t like the taste of it, it was just too funky for me. I usually can handle the weird flavors pretty well knowing its all for the benefits of my health. Unfortunately, even my optimistic and health-conscious mindset didn’t help. I tried making different smoothie recipes with other more delicious ingredients, but I couldn’t cover up that strong flavor of Sacha Inchi. Since then it was just sitting in my kitchen for months.

Since we are under quarantine times here in New York, it is time to make use of those forgotten products that are just sitting taking up precious space in our kitchens. I was determined to make something delicious with Sacha Inchi Powder and that’s how this recipe was born.

The recipe is very simple and straightforward. I literally used the ingredients I had at the moment to make these bars. I couldn’t go out and get more nuts or other superfood powders. If I had more ingredients on hand, I would most likely use them.

I also used a Date Syrup as a liquid sweetener as this was also the only choice I had available. I usually always have a bottle of Coconut Nectar or Honey in my house, but somehow I didn’t stock up on them.

Cacao Nibs & Chia Seeds give a very nice crunch! Almond butter and date syrup covered up Sacha Inchi Protein aftertaste really nice.

I encourage you, my readers, to use the products you already have and modify this recipe by adding/replacing ingredients.

SACHA INCHI PROTEIN BARS

Servings: about 10 bars

INGREDIENTS:

  • 3 tbsp Sacha Inchi Protein powder
  • 3 tbsp almond butter
  • 1/3 cup chia seeds
  • 1/3 cup cacao nibs
  • 1/3 cup liquid sweetener (coconut nectar, date syrup, honey)
  • 200 -250g melted Dark Chocolate

Instructions:

  1. Put almond butter, protein powder, cacao nibs, chia seeds, and your choice of liquid sweetener into a food processor and process until you get a moist dough that holds its shape when pressed between fingers.

  2. Press the dough evenly into a lined baking pan (on top of a parchment paper or cling film). Pop in the refrigerator for a few hours or freezer for about 30 min.

  3. When the mixture is set, carefully cut it into small squares.

  4. Place your bars on a wire cooling rack/pan grate and a baking tray underneath so when you pour melted chocolate on top of the bars, the chocolate doesn't get spilled.
  5. You can use goji berries for decoration, and also fully dip your bars in chocolate instead of just covering one side.

Notes: Feel free to use any protein powder of your choice. You can also add a variety of other nuts, seeds and superfood powders. This particular recipe was created with what I had in my pantry at the moment.
